I'd start with an egg per muffin. We use quail eggs and used 3 per... How many eggs will depend on size of the muffin and how much other stuff you put in. If you use meat, you'll have less room for egg. Lots of cheese? Less room for egg. We use a dollop of cream just to smooth out the mixture, like when we make scrambled eggs. I'm trying to imagine how this could go wrong but can't... I'd love to hear how yours turned out! This is still pretty new for us :)
