Nice article, Sally! I know a lot of people pronounce it Kee- fir, but I’m with you on the pronunciation.
I’ve tried kefir made with grains any any amount is too tart and I don’t want to add honey or any sugar. So I’m now using Yogourmet kefir powder - the purple package with bifido bacteria. It’s very smooth and I can use the kefir I’ve made for at least 3 batches before I need to open another package. This is what works for me.
