My first goal is to make a delicious flat bread starting with organic white flour. (I just ordered cassava flour, anxious to try that!)
Hal’s basic bread recipe is so simple:
INGREDIENTS
900 grams flour
650 grams water
25 grams salt
25 grams yeast
HOW-TO
Mix the water & yeast, till it bubbles a little. Add the salt. Mix in the flour.
Knead lightly till well blended. It will be sticky, but you will be adding extra flour.
Proof/let rest in a warm place for an hour or so
Pull off little balls, roll out into a circle on a floured surface
Fry on medium heat, both sides in a cast iron skillet using a teensy tiny bit of fat. It may puff up a little, that is good.
Versatile!
We use this bread recipe for all breads: pizza, a loaf, cinnamon rolls, regular rolls, apple stuffed… really, anything at all.
For a loaf, make an egg wash with an egg or two, brush on the crust, you can sprinkle sesame or poppy seeds on there, too. Pull a knife across the top for little slits, then it’s pretty!!!
Heck, we often have a bowl of dough in the fridge. Pull it out, grab a hunk, roll out and fry for a quick bread.
