Canning Peaches: So Simple
And so good!

It’s peach season and I can’t bear the thought of it ending!!! So I buy a bunch when I find them and can, cause these babies don’t keep.
I’ve been canning for about 4 years now and it’s so easy. Also, I like the end product better than freeze-drying. With canning, you have dinner, desert, and snacks all ready to go.
There are 18 peaches in these 10 pints! Tragically, I can rarely find them grown organically. Every bug and bird LOVES peaches, too. It’s the one of the very few foods for which I break my “organics only” rule.
Here’s how I did it. The entire prep took maybe 30 minutes.
Canning Peaches
Wash peaches — that fur attracts dust!
Gather & wash jars, lids, rings (I did pints). If you have new lids, wash them well, otherwise the rubber can leave a “taste” in the jar.
Put 1 TB sugar in bottom of each jar.
I do not peel :)
Cut peach in half and remove the pit.
You can cut them anyway you want — some people can halves. I cut each half into 8 chunks so more fit in the jar. Then I fill the jar with peaches to just below the rim.
I also put one pit into each jar. (Canning Rebels idea!)
Fill with filtered water to the bottom of the rim. (The peaches shrink quite a bit.)
Wipe jar rims with vinegar on a paper towel. I also wipe the inside of the lids.
Place lids on jars, add rings and tighten just enough (called “finger tight” in canning lingo).
Place the jars in your canner (I have the Nesco electric canner, $148 on Amazon, IMO perfect for beginners), cover with water and waterbath for 20 minutes. The Nesco holds 5 pints so I did two times.
Remove from canner and let sit till the lids pop, that means they are sealed.
When cool enough to handle, remove the rings, rinse the jars and store. You always remove the rings from the finished product so that if a jar comes unsealed for any reason, you spot it right away!
Enjoy. Awesome plain, over ice cream, with cottage cheese, pie filling… whatever!
Ask your AI how to waterbath without a canner — I think you just cover the jars with water in a deep pot and boil the water for 20 minutes!
